In a quest to create a delicious, complex, full flavoured Imperial cider that packed a punch, we knew right away which apple to start with. Rich, layered and iconic, Northern Spy is an emblematic heirloom apple perfect for crafting such a cider. Spiritous notes of baked apple and honeysuckle are anchored by a bold yet super smooth structure accented with silky wisps of vanilla courtesy of the oak and chestnut we ferment on. We left some residual sweetness by stopping the fermentation of the wild-type yeasts a little early, to add depth, balance and to really highlight those luscious caramel and floral notes.  Eloquent talk aside; it's really tasty. An extremely satisfying sipper for any occasion.
